Italian Classics Night.
Well, the summer is here again, at least almost and I'm back on the light food, or somewhat lighter foods. This is my take on an Italian classic meal.
A light crusty focaccia bread with mixed leaf salad with Neapolitan tomatoes and a homemade vinaigrette. I use extra virgin olive oil and red vinegar with a little mustard if I have it and the best rock salt I can get my hands on. I have been trying Himalayan lately which I find nice because of the pinkish hue. This is served with some cured ham or prosciutto as the Italians call it.
For dessert, an Amalfi lemon tart and possibly an Amalfi inspired cocktail liqueur. I would recommend a fine Limoncello, perhaps a Pallini Limoncello Liqueur with some ice and homemade lemonade made with Italian Amalfi Lemons.
Finish with Italian coffee if you are staying up late or serving the meal early! Enjoy...
